Black Bean and Pumpkin Soup (and biscuits!)

Black Bean and Pumpkin Soup

You’ll need:

  • 2 cans black beans, rinsed
  • 1 can diced tomatoes (if you’re into tomatoes, or not if you’re not.)
  • 1 can pumpkin puree (or in this case, a small heap of freshly pureed pumpkin)
  • 1-2 onions, diced
  • 4 garlic cloves, minced
  • ½ c cooking sherry
  • ½ stick soy margarine
  • 4 c vegetable broth
  • 1 t salt
  • ½ t black pepper
  • 2-3 t cumin
  • 3-4 T balsamic vinegar

African Peanut Soup

African Peanut Soup

In a large sauce pan, heat up:

  • a dribble of olive oil
  • a good-sized yellow onion, chopped
  • two cloves of garlic, chopped
  • a knuckle of fresh ginger, peeled and grated
  • pinch of cinnamon
  • bigger pinch of cumin
  • smaller pinch of cayenne – or a squirt of sriracha sauce, or a small spoon of chili garlic sauce

February session of Torley Manor Community College

This week we are going to make soup or stew for every dinner all week.  So we decided that we’ll open up the first session of Torley Manor Community College this week. If you want to learn to cook any of these soups, come over to our house at around 5.30-5.45 (we’ll start cooking at 5.45pm). We’ll give you the recipe and show you how to make the soup.

Monday, February 11: African Peanut Soup, with kale and baking powder biscuits

Tuesday, February 12: Black Bean and Pumpkin Soup (if you come to this one, you can take home with you some extra pumpkin!)

Wednesday, February 13: Double whammy. We’ll make two dinners. Potato Leek Soup for tonight, and Vegetable Chili for Thursday night (chili’s really almost always better if you let it sit for an extra night).

Thursday, February 14 is Valentine’s Day and we figure no one wants to hang out with us on that day so we’ll skip that day.

 Friday, February 15: Ariana’s Spinach & Lentil soup.

Also of course if you can’t come, we’ll post the recipes and process and probably some dorky photos too. I have some backlogged from making lentil soup previously and also from making homemade vegetable stock and so-called Italian Wedding Soup.
